95% Pinot Grigio, 5% Chardonnay.  Pressed the same day as picked. Vineyard lots kept separate until just before bottling. About 80% of the wine was full cluster pressed for acidity. Other 20% was de-stemmed and crushed, for a richer mouth-feel. Fermented with native yeasts. 20% of the Pinot Grigio was fermented in neutral French oak barrels, and the balance in stainless steel tanks. 30% of the wine went through malolactic fermentation for further texture. The wine was filtered, blended, and bottled in the second week of April, 2008.

SENSORY ASSESSMENT:

Closed with a screw cap, this wine is pale gold with excellent clarity and a fleeting, very faint effervescence. Medium intensity aromas of honey and light pear at first, and then a note of grapefruit and hints of coconut and dried guava. In the mouth, dominant minerality and light to medium lime flavors. Lower-med bodied, dry but a bit hollow in the middle, with light warmth in midpalate to finish. The the acidity is bright and nervy. A long finish of mineral and lime dominant but some rounder, richer stone fruit flavors come out with time and warming.

 

OPINION:

Dry and mineral. Faintly and transiently reductive at first. Clean, but a bit hollow. Chardonnay character is amazingly very prominent and dominates the mouth more so than the aromas. This wine gains expressivity with increasing temperature so don't over chill it. Will go great with crab cakes with mango salsa. Could also do well with pasta and white sauces, fish and chicken piccata. Good for two to three years.
